Colombia owes its name to the discoverer of America, Christopher Columbus. And it was Columbus who brought the first chilli varieties to Europe. The fertile Amazon basin of Colombia, one of the largest nature reserves on earth, is one of the areas of origin of the chilli family. And it is precisely to this river that one of the most exclusive chilli varieties owes its name - the yellow Amazon or Amazon chilli. With 50 - 70,000 Scoville, this fiery chilli is one of the hotter, but not extreme chillies. It convinces with a beautiful fruity note, straightforward spiciness and discreet acid notes. It is no coincidence that this chilli variety is reminiscent of the probably best-known type of chilli, the famous Tabasco chilli. Both varieties are related and belong to the Capsicum Frutescens group. The yellowish colour of the Amazon chilli is particularly striking, as it is harvested shortly before it is fully ripe. Thanks to gentle drying, the beautiful colour is preserved, as is its fruity spiciness. The Amazon chilli is versatile in the kitchen. Sauces or soups, stews, stews, meat dishes or dips are just waiting to be refined with Colombian spiciness. If you like it more subtle, add the chilli to the dishes just before serving. The longer the chilli cooks, the more dominant the spiciness becomes.
