Our Petit Chili comes from the southwestern part of Madagascar. The African island in the heart of the Indian Ocean has an exceptional climate and fertile soils. The small, red chili belongs to the species Capsicum frutescens and looks visually like the smaller version of the Birds Eye Chili. The fruits of the Capsicum frutescens species usually grow on small bushes, and fully ripe fruits are bright red in color. The plants themselves can reach heights of up to two meters under optimal conditions. The fruits have a long ripening period, during which they form a very intense pungency. The best known representatives of the Capsicum annuum species are the ¨Tabasco¨ variety, the basis of Tabasco sauce, and the ¨Malagueta¨ variety, from which piri-piri sauce is made. The Petit Chili is used wherever it should be really hot, such as chili con carne, goulash, fiery sauces, stews and braised dishes.
