Biova Tellicherry pepper comes from Kerala in southern India on the Malabar Coast and is one of the most aromatic varieties of black pepper. The almost fully ripe berries are coarsely cracked, creating a rustic, granulated structure with a black to reddish-brown color. Due to the late harvest as a late-harvest pepper, a complex flavor profile with nutty and woody notes develops, clearly setting it apart from standard pepper. Origin
The pepper comes from the Periyar Nature Reserve in the state of Kerala on the Malabar Coast in India. Smallholder farms supply the berries, which are selected for Biova according to defined quality criteria.
Cultivation / Production / Harvest
The plants grow on supports in the shade of taller trees and are harvested when almost fully ripe, once the berries have turned reddish-brown. After harvesting, they are dried in the sun until the skin is dark and aroma-tight. The corns are then cleaned, sorted and coarsely granulated to obtain an even cracked grind as bulk goods.
Special features
As Tellicherry late-harvest pepper, only a small part of the crop reaches this quality. The combination of almost fully ripe harvest, careful drying and coarse granulation gives it its warm, slightly nutty aroma.
