Guérande sea salt | PGI* | fine | 0.1-1.0 mm

Product information "Guérande sea salt | PGI* | fine | 0.1-1.0 mm"

What is it about / Product description

This Guérande sea salt comes from the traditional salt marshes on the French Atlantic coast and is harvested by elaborate manual work. The fine grain size of 0.1–1.0 mm and the natural, slightly greyish colour are created through contact with mineral-rich clay. This gives you a natural sea salt with a distinctive, well-balanced flavour.

Because it is gently produced without refining, the typical minerals and trace elements of sea salt are largely preserved. Biova’s Guérande salt is offered as high-quality bulk goods and is ideal for professional kitchens as well as discerning home cooks. The fine structure dissolves quickly and allows for even dosing when seasoning.

In everyday cooking, this fine sea salt refines soups, sauces, vegetable dishes, meat, fish and side dishes. Thanks to its strong but not overpowering saltiness, it is suitable both for cooking and for seasoning at the table. Due to its natural residual moisture, it is preferably used without a mill or in ceramic or stainless-steel mills with a larger opening.

Origin

The sea salt comes from the Guérande region in Brittany in western France. There, Atlantic winds, clean sea currents and many hours of sunshine provide ideal conditions for traditional salt production. The centuries-old salt-making culture of the region stands for consistent quality and careful manual work.

Cultivation / Production / Harvest

In the shallow salt pans, seawater is channelled into basins and slowly concentrated by sun and wind. On the grey-blue clay bottom, the salt crystallises and is harvested by experienced salt workers by hand using wooden tools. It is then only dried and sieved to obtain the fine grain size – completely without chemical additives.

Special features

Characteristic of Guérande sea salt is its slightly grey colour, which is created through contact with the mineral-rich clay of the basins. In contrast to refined table salt, it remains non-iodised and unrefined, thus preserving its natural profile. In Biova quality it is offered as a fine, flaky sea salt that is particularly easy to dose.

Differences in origin and processing

Compared to industrially evaporated vacuum salt, Guérande sea salt is obtained exclusively through natural evaporation. Traditional hand harvesting sets it apart from many other sea salts that are machine-processed and heavily purified. Its regional origin in Brittany shapes the flavour and the typical colour of this Atlantic sea salt.

Taste & aroma

Sensory-wise, the salt presents a strong, clear saltiness that enhances dishes without overpowering them. The taste is round and harmonious, with a slight mineral note. In terms of aroma, Guérande sea salt is subtle and neutral, so it supports the natural flavour of the ingredients in the best possible way.
