Origin

The sea salt used comes from a small sea saltworks located in the middle of a nature reserve on the Croatian coast. There, sun, wind and clean seawater ensure consistently high quality of the salt flakes. In Germany, in the heart of Saxony, the salt is then further processed by an experienced smoking master and refined into organic smoked salt for Biova.

Cultivation / Production / Harvest

The sea salt is traditionally obtained in salt gardens, where seawater evaporates in shallow ponds and the salt crust is harvested by hand. After drying, the salt is transported to Germany, where it is smoked over beechwood chips in a controlled cold-smoking process. The granulated grain size of 1–3 mm is achieved by gentle crushing and sieving, resulting in uniform granules for further processing in bulk / retail variants.

Special features

Biova’s organic smoked salt is cold-smoked, which makes the aroma intense but not bitter and preserves the crystal structure of the salt. The brown colour is created solely by contact with the smoke; no colourings or flavourings are added. Compared to fine smoked salts, the granulated, coarse salt dissolves more slowly and is therefore particularly suitable for rubs, spice blends and decorative finishing.

Differences in origin and processing

While many smoked salts are based on rock salt or industrially processed sea salt, this variety combines traditionally harvested sea salt from Croatia with German smoking craftsmanship. Cold smoking over beechwood imparts a classic, woody-warm aroma that differs from more strongly flavoured smoked salts. Thanks to production in smaller batches, Biova can ensure consistent quality and a harmonious smoke level.

Taste & aroma

The organic smoked salt has an intense beechwood smoke scent with slightly spicy, savoury notes. On the palate it is salty with a pronounced yet balanced smoky aroma that is reminiscent of BBQ and charcoal grills without being overpowering. The coarse grain ensures that the aromas develop slowly and remain easy to dose both during cooking and for final seasoning.
