In the west of the country, local farmers collect the rare Bhutanese lemon pepper, a wild subspecies of Szechuan pepper, with much smaller seed pods. This lemon pepper lives up to its name. The intense, fresh aroma of the pepper is beguiling. When tasting immediately a tingling, with subsequent slight numbness on the tongue and throughout the mouth, noticeable. A mild spiciness, combined with intense aromas of lemon and grapefruit provide a unique taste experience. Use the Bhutan lemon pepper very sparingly due to its high intensity. The pepper goes well with Asian dishes, poultry, fish and seafood. Marinades and sauces enrich the spice with completely new flavors.
