Long pepper is a climbing plant whose fruits are reminiscent of willow or birch catkins. The cultivation area extends over the entire Southeast Asian region from Indonesia to India. Our long red pepper comes from the regions of Kampot and Takeo in Cambodia. Long pepper was well known in Europe long before the black pepper used today, but was completely forgotten over the centuries. In recent years, this fantastic pepper has been rediscovered. The long pepper is much more multi-faceted than the standard pepper. The fruity-sweetish, slightly cinnamon-like smell should not hide the fact that the long pepper has a very intense, earthy pungency. Harvesting the red long pepper is very difficult. Only when the fruit reaches its optimum degree of ripeness, intensive sunshine and high temperatures prevail at the time of harvesting, so that the harvested fruit can dry well, the red colour of the long pepper can be retained. Each individual fruit has to be selected by hand, which makes this pepper so rare and precious. This difficult type of pepper cultivation was perfected by the Khmer people. The Long Pepper can be boiled along with it, e. g. in stews and stews, as well as mortarised. It is only conditionally suitable for the pepper mill.
