The small elliptical leaves of this robust plant exude a wonderfully fresh and intense lemon aroma with a hint of eucalyptus and camphor. In the kitchen, lemon myrtle is a true all-rounder. Whether fish, seafood, poultry, vegetables, Asian cuisine, salads, pastries and desserts, drinks, the applications are very versatile. As the lemon myrtle is very intense, it should be added sparingly and preferably only at the end of the preparation process. A sea salt or Fleur de Sel flavoured with lemon myrtle tastes great on fish dishes.
