Our sun flakes are extracted exclusively by hand in a seawater saltworks on the coast of Pakistan. The sun flakes are a real fleur de sel. On hot and windy days, the evaporation of the seawater on the water surface creates small salt flowers that resemble a fine layer of ice. These are skimmed off by hand with a wooden ladle. To turn a moist fleur de sel into our snow-white sun flakes, the freshly harvested salt is dried under glass panes by the action of the sun. The drying process changes the structure of the salt. The moist fleur de sel becomes beautiful salt flakes, similar to Murray River salt. The sun flakes get their exceptionally mild taste from the calcium and magnesium content. Due to its special structure, this fleur de sel is rarely used for cooking, but primarily as table salt for ¨finishing¨.
