Product information "Tellicherry pepper | whole | TGSEB"
What it is / Product description
Tellicherry pepper from Kerala in southern India is among the finest forms of black pepper and is obtained from berries harvested when almost fully ripe. The whole peppercorns appear reddish-brown to black with a particularly large, uniform grain size. At Biova you receive this specialty spice as high-quality bulk goods for professional kitchens and discerning retailers.
Thanks to the late harvest and gentle drying, this late-harvest pepper develops an intensely warm, multi-layered aroma with a harmonious, long-lasting heat. The TGSEB quality ("Tellicherry Garbled Special Extra Bold") stands for carefully selected, extra-large berries. Biova places great value on consistent premium quality, which is reflected in the appearance, fragrance and taste of the whole peppercorns.
In use, Tellicherry pepper is ideal for freshly grinding in a mill and, due to its intensity, should be used sparingly. It pairs well with meat, fish and vegetables and also refines sauces, soups and stews as a universal pepper. This way, restaurants, delicatessen manufacturers and hobby cooks alike benefit from the aromatic diversity of this Biova bulk product in 1 kg units.
Origin
The pepper comes from the state of Kerala on the Malabar Coast in India, particularly from the region around the Periyar nature reserve. Tropical climate, abundant rainfall and fertile soils provide ideal conditions for aromatic pepper varieties. From this region of origin, qualities have been coming for centuries that are particularly valued in the international spice trade.
Cultivation / Production / Harvest
The pepper plants grow as climbing plants on support trees and are cultivated in small plots. For Tellicherry qualities, the berries are harvested only when they are almost fully ripe and have developed their full aroma. They are then gently dried and hand-sorted by size and quality according to the TGSEB standard before being packed as whole corns into bulk units for Biova.
Special characteristics
Characteristic are the extra-large grain size and the reddish-brown coloration of the dried berries, which is due to the longer ripening time. Compared to conventional black pepper, the aroma is more intense, warmer and slightly nutty. The bulk goods offered by Biova enable economical use in gastronomy, delicatessen retail and spice manufacturing.
Differences in origin and processing
In contrast to standard pepper, which is often harvested earlier and in larger quantities, Tellicherry goods come from selected locations with strict quality control. The late harvest as late-harvest pepper and the elaborate hand-sorting according to the TGSEB standard result in a more complex aroma and a strikingly large grain size. This processing makes it stand out both sensorially and visually from many other black peppers.
Taste & aroma
The whole corns show a strong yet well-balanced heat with warm, slightly nutty and subtly woody notes. Their fragrance is reminiscent of tea, sandalwood and dried fruits. When freshly ground, a multi-layered pepper aroma unfolds that gives dishes depth and spice without overpowering them.
