The nutmeg tree reaches heights of up to 20 metres. The tree only begins to bear its first flowers after eight years. The resulting fruits have a diameter of about 4-5 cm and resemble ripe peaches. Similar to a walnut, there is a thick shell on the outside and the seed inside, which we know as a nutmeg. The inner seed kernel is covered by a reddish seed coat known as mace. The equally common name ¨mace¨ dates back to the Middle Ages, when mace was believed to be the flower of the nutmeg tree. Mace has a similar aroma to nutmeg, but is finer and more elegant. In addition to the typical nutmeg aroma, mace reminds one a little of cloves, a hint of caramel and a very subtle bitter note. Mace is mainly used in potato dishes, soups, white sausages and cabbage vegetables. Mace also combines well with chocolate or pastries and adds an exotic touch to mulled wine and punch.
