What is it about / Product description
This Alderwood Smoked Salt Salish Alderwood is made from natural sea salt that is gently refined in cold smoke over alder wood. The coarse granule structure of 1–3 mm ensures an even distribution of the smoky aromas. Visually, the smoked salt presents itself in warm brown tones reminiscent of traditionally wood-smoked specialties.
The salt remains in the smokehouse for up to 16 days, with several smoking intervals per day, turned by hand and carefully aerated. In this way, an intensely aromatic yet pleasantly mildly salty smoked salt of consistently high quality is created in the Biova manufactory. The granulated, coarse grain size makes it ideal for bulk users in kitchens, gastronomy and artisan production.
Use Alderwood Smoked Salt Salish Alderwood for easy refinement of salads, stews, egg dishes or vegetarian meals. Marinades, rubs, sauces as well as meat and fish dishes also benefit from the well-balanced smoky note. The coarse granules can be sprinkled directly over dishes or further processed in mills and spice blends.
Origin
The sea salt used comes from selected coastal regions in Germany and Croatia and is obtained under controlled conditions. The temperate climate and clean sea air form the basis for a pure, natural salt. In Germany, the artisanal refinement into alderwood smoked salt then takes place in Biova’s production facility.
Cultivation / Production / Harvest
The sea salt is traditionally obtained by evaporating seawater and gently dried after harvesting. In the smokehouse, the salt is treated in special chambers in the cold smoke of alder wood over a period of up to 16 days. Several daily smoking intervals, manual turning and aeration ensure an even penetration of the crystals with smoke.
Special features
Characteristic of this smoked salt is the combination of intense smoky aroma and mild saltiness. The coarse, granulated structure with a grain size of 1–3 mm makes it particularly easy to dose and predestines it for use as bulk goods in larger kitchens. Production in small batches enables Biova to maintain constant control over the smoke density and moisture content of the salt.
Differences in origin and processing
Depending on the region of origin of the sea salt, the mineral content and crystal structure vary slightly, which subtly affects mouthfeel and solubility. The actual character of the product, however, is shaped by the cold-smoke refinement over alder wood. This traditional processing clearly distinguishes the salt from industrially flavored smoked salts and ensures a natural, authentic aroma.
Taste & aroma
In terms of taste, a mild, well-balanced saltiness combines with a clearly perceptible but not overpowering smoky aroma. The scent is reminiscent of freshly smoked foods and a classic alder wood fire. On the palate, the granulated smoked salt is harmonious and rounded, without bitterness or artificial off-notes.
