Gentle drying and controlled crushing at Biova additionally help to keep the sensory properties stable.Taste & aromaIn terms of aroma, Trinidad Scorpion shows intense, fruity chili notes with a slightly tropical character. In taste, it first appears aromatic and fruity, followed by a very quickly setting, long-lasting burn. When used sparingly, the heat does not immediately overpower all other aromas, which makes this chili well suited for characterful dishes.Possible applicationsFor fiery seasoning of sauces, stews and curriesAs a hot component in BBQ rubs, marinades and grill seasoningsFor chili oils, pastes or hot spice blends in professional and home kitchensProduct specificationCountry of origin: EcuadorGrain size: crushed, approx. 2–5 mmColor: redHeat level: approx. 650,000–700,000 Scoville (> 500,001)Form: bulk goods, granulated / crushed / coarseWeight per unit: approx. 1.05 kg per kg unit

Hot to mild exotic chillies
Whether for barbecues, risottos, Mexican tapas or other dishes, chilli gives every dish a fiery flavour. The Mayans and Aztecs already knew this, adding a pinch of the spicy flavouring to their sacred drink Xocolatl in addition to cocoa and water. When Christopher Columbus discovered the New World in the belief that he was travelling to India, one of the things he brought back home from his expeditions was chilli. Today, around 4,000 different types of chilli are known around the world. But not all of them are as hot as you might think. After all, chillies belong to the pepper family. The pharmacologist of the same name developed the Scoville scale to assess the flavour of chillies. He gave ordinary chilli peppers with no detectable heat a value of 0. In comparison, chilli peppers - depending on the variety - are between 100 and 500 Scoville hot. This is no comparison to the hottest variety, Carolina Reaper, which is only tolerated in very low doses with a pungency of 2,200,000 Scoville.
The Piment d' Espelette variety from Biova, which comes from the Basque Country in France, is milder. Its mild flavour enhances sauces, pasta and rice dishes, meat and fish. The variety derived from the Gloria chilli pepper has been cultivated in Europe for 400 years. Legend has it that the Basque navigator Gonzalo de Percartegu brought it back to his homeland from his voyages of discovery to the west. In addition to other varieties, we at Biova also have the jalapeno chilli, which is popular in Europe, in organic quality in our range. As an integral part of chilli con carne, barbecue sauces and other fiery dishes, it is an indispensable part of Tex-Mex cuisine. Cayenne pepper is also a type of chilli pepper. It consists exclusively of ground cayenne peppers, which originally come from South America. Cayenne pepper from Biova comes from China and harmonises perfectly with stews, minced meat, soups and vegetarian options.
