The Mayans and Aztecs already knew this, adding a pinch of the spicy flavouring to their sacred drink Xocolatl in addition to cocoa and water. When Christopher Columbus discovered the New World in the belief that he was travelling to India, one of the things he brought back home from his expeditions was chilli. Today, around 4,000 different types of chilli are known around the world. But not all of them are as hot as you might think. After all, chillies belong to the pepper family. The pharmacologist of the same name developed the Scoville scale to assess the flavour of chillies. He gave ordinary chilli peppers with no detectable heat a value of 0. In comparison, chilli peppers - depending on the variety - are between 100 and 500 Scoville hot. This is no comparison to the hottest variety, Carolina Reaper, which is only tolerated in very low doses with a pungency of 2,200,000 Scoville.
The Piment d' Espelette variety from Biova, which comes from the Basque Country in France, is milder. Its mild flavour enhances sauces, pasta and rice dishes, meat and fish. The variety derived from the Gloria chilli pepper has been cultivated in Europe for 400 years.
