Origin

The chillies come from Ecuador, where warm temperatures and plenty of sunshine offer ideal conditions for Capsicum chinense. In selected growing regions the fruits ripen slowly and develop their deep red colour, while Biova ensures consistent quality of these extremely hot red chillies.

Cultivation / production / harvest

The plants are grown outdoors or in protected cultivation and are checked regularly during the ripening phase. Only fully ripe red pods are harvested, gently dried, then coarsely crushed to 1–3 mm, sieved, inspected and packed into 1.05 kg bags.

This product is characterised by an extremely high heat level of over 500,000 Scoville heat units combined with a strikingly fruity aroma. The coarse cut allows the flakes to distribute well in the dish, so very small quantities are enough to add noticeable heat and to control the spice level precisely.

Origin and processing differences

Bhut Jolokia is originally known from India, but cultivation in Ecuador offers stable climatic conditions and reliable yields. Biova relies on clean raw material, gentle drying and even crushing so that colour, heat and aroma are better preserved than with fast high-temperature processing.

Taste & aroma

On the palate, ghost pepper shows strong, long-lasting heat with fruity notes reminiscent of dried apricots, mango and red bell pepper. On the nose, alongside the intense pungency, there are light sweet and subtly smoky hints, while the rich red colour underlines the fiery character of these crushed chilli flakes.
