Product description
Ancho chilli is the dried form of the Mexican poblano chilli and is one of the classic mild chillies in Mexican cooking. In this coarsely crushed 1–3 mm cut it lends dishes a deep dark red colour and a pleasant, gently spicy heat.
Its fruity, sweet notes with hints of raisins, liquorice, tobacco and coffee make this mild chilli an extremely versatile seasoning. Biova relies on carefully selected raw material and gentle processing so that colour, aroma and flavour remain as authentic as possible.
With a mild heat level of around 1,000–5,000 Scoville, ancho chilli can be used generously and combines well with hotter chillies. It is ideal for sauces, marinades, stews, rubs and custom spice blends with an authentic Mexican character.
Origin
The poblanos used come from Mexico, where warm, sunny weather and long growing seasons promote an intense flavour profile. In these traditional growing regions the fruits develop their typical dark red to almost black colour and their characteristic, multi-layered taste.
Cultivation / production / harvest
The chillies are harvested fully ripe once they have developed their dark red colour. They are then gently dried before the pods are cleaned and processed into a coarse granulate of around 1–3 mm, which allows precise dosing in the kitchen.

Compared with many other chilli varieties, ancho is very mild, so its aroma clearly takes centre stage.
