Wiri Wiri cherry chili originates from South America and is supplied for Biova mainly from Ecuador as whole, round pods of around 1.2–2 cm in length. The dark red fruits reach 60,000–150,000 Scoville heat units and combine intense heat with a fruity, tomato-like aroma.
At Biova this cherry chili is gently dried, carefully cleaned and supplied in bulk with consistent quality. This preserves the essential oils, colour and heat to a large extent and makes the chilies easy to dose.
Use whole Wiri Wiri chilies in a wide range of Caribbean and South American dishes such as stews, sauces or marinades. Because the pods are used whole, they can easily be removed again after cooking.
Origin
Originally native to Guyana, Biova quality now comes mainly from Ecuador. The tropical climate with warm temperatures and high humidity ensures even ripening and stable heat levels in these dark red cherry chilies.
Cultivation / processing / harvest
The plants are grown outdoors and harvested only when they have developed a full, deep red colour. Immediately after harvest they are gently dried, then the whole pods are cleaned, graded by size and packed in bulk in units of approx. 1.05 kg.
