Product information "Alpine Rock Salt Bergkern Granules 1.4–4.0 mm"
Product description
This Alpine rock salt from the Austrian Salzkammergut is offered as a natural, unrefined rock salt in coarse granules. The 1.4–4.0 mm grain size is predominantly white with fine pink inclusions and is ideal as a versatile table and cooking salt.
Because it is stored deep in the mountain core, the salt has been protected in the rock for millions of years and is free from chemical additives. Gentle, purely mechanical processing at Biova preserves the natural companion minerals and ensures good free-flowing properties, even in bulk packs.
In the kitchen, this Alpine salt is highly versatile – from everyday seasoning through to use in mills, spice blends or salt crusts. This coarse rock salt can be used flexibly in professional foodservice as well as in demanding home kitchens.
Origin
The rock salt comes from Austria, specifically from the traditional Salzkammergut region in the Alps. There, the Bergkern deposits lie deep beneath massive rock layers and are protected from modern environmental influences.
Production / processing / harvest
The Alpine salt is extracted by underground mining, where selected deposits in the mountain core are opened up. Experienced miners loosen the raw salt from the rock, after which it is mechanically crushed, cleaned and sieved to 1.4–4.0 mm without refining.
Special features
The mountain core, enclosed deep inside the mountain, is regarded as a particularly pure, natural rock salt with a characteristic mineral content. Biova offers the coarse granules in bulk, enabling efficient further processing in spice manufacturers, food companies and the catering trade.
Differences in origin and processing
Unlike sea salt from evaporated seawater, this Alpine salt comes from fossil seas that were overlaid by rock. Dry storage in the mountain and purely mechanical processing without chemical treatment distinguish it from many industrially refined table salts.
Taste & aroma
This rock salt stands out for its clear, pure saltiness without intrusive off-flavours. It is neutral in aroma and supports the natural taste of dishes, making it an excellent base for Biova customers’ own spice and herb salt blends.
Possible uses
- For filling salt and spice mills for everyday use in professional kitchens and foodservice.
- For marinades, salt crusts, grilled and braised dishes where the coarse granules should dissolve slowly.
- As a base for custom spice and herb salt blends in manufactories and food businesses.
