Product information "Alpine rock salt, coarse Bergkern granules 1.4–4.0 mm, Austria"
Product description
This Alpine Bergkern salt comes from Austria’s Salzkammergut region and is offered as a natural rock salt in a coarse granule size. The 1.4–4.0 mm grain is predominantly white with fine pink inclusions and is ideal as a versatile table and cooking salt.
Stored deep within the mountain core, this salt has been protected inside the rock for millions of years and is free from chemical additives. Gentle, purely mechanical processing at Biova preserves the natural trace minerals and ensures good flowability of the bulk product.
In the kitchen, this Alpine salt is highly versatile – from everyday seasoning to use in grinders, spice blends or salt crusts. This coarse rock salt can be used flexibly in professional foodservice as well as in demanding home kitchens.
Origin
The rock salt comes from Austria, specifically from the traditional Salzkammergut region in the Alps. Here, the Bergkern deposits lie deep beneath massive rock layers and are protected from modern environmental influences.
Production
The Alpine salt is extracted by underground mining, where selected deposits in the mountain core are developed. Experienced miners loosen the raw salt from the rock; it is then mechanically crushed, cleaned and sieved to 1.4–4.0 mm without any refining.
Key features
Enclosed deep within the mountain, Bergkern is regarded as an especially pure, natural rock salt with a characteristic mineral profile. Biova supplies the coarse granules as bulk goods, enabling efficient further processing in spice manufacturers, food producers and the catering industry.
Origin and processing differences
Unlike sea salt from evaporated seawater, this Alpine salt originates from fossil seas that were later overlaid by rock. Dry storage inside the mountain and purely mechanical processing without chemical treatment set it apart from many industrially refined table salts.
Taste & aroma
This rock salt delivers a clean, pure saltiness without intrusive off-flavours. It is neutral in aroma and supports the natural taste of dishes, making it an excellent base for Biova customers’ own spice and herb salt blends.
Suggested uses
- For filling salt and spice grinders for everyday use in kitchens and professional foodservice
- For marinades, salt crusts, grilled and braised dishes where the coarse granules should dissolve slowly
- As a base for custom spice and herb salt blends in manufactories and food production
