Alpine salt mountain core | granulate | 1.4-4.0 mm

Product information "Alpine salt mountain core | granulate | 1.4-4.0 mm"

What it is / Product description

This Alpine salt rock core comes from Austria’s Salzkammergut region and is offered as natural rock salt in coarse granules. The grain size of 1.4–4.0 mm appears predominantly white with subtle pink inclusions and is ideal as a high-quality table salt.

Due to its deep deposit in the rock core, the salt has been protected in the rock for millions of years and is free from chemical additives. Gentle, purely mechanical processing at Biova preserves the natural accompanying minerals and ensures good flowability of the bulk goods.

In the kitchen, the Alpine salt proves to be versatile – from everyday basic seasoning to use in mills, spice blends or salt crusts. This allows you to use the coarse rock salt flexibly in professional gastronomy as well as in sophisticated home cooking.

Origin

The rock salt comes from Austria, specifically from the traditional Salzkammergut region in the Alps. There, the rock core deposits lie deep beneath massive rock layers and are protected from modern environmental influences.

Extraction / Production / Harvest

The Alpine salt is obtained by underground mining, in which selected deposits in the rock core are developed. Experienced miners extract the raw salt from the rock, after which it is mechanically crushed, cleaned and sieved to 1.4–4.0 mm without refinement.

Special features

The rock core enclosed deep in the mountain is considered an especially pure, natural rock salt with a characteristic mineral content. Biova offers the coarse granules as bulk goods, enabling efficient further processing in spice manufactories, food companies and gastronomy.

Differences in origin and processing

Unlike sea salt from evaporated seawater, this Alpine salt comes from fossil seas that were overlaid by rock. The dry storage in the mountain and the purely mechanical processing without chemical treatment distinguish it from many industrially refined table salts.

Taste & aroma

The rock salt impresses with a clear, pure salty taste without intrusive off-flavours. It is neutral in smell and supports the natural flavour of dishes, making it an excellent base for your own spice and herb salt blends.

Possible applications

  • For filling salt and spice mills for daily use in kitchens and gastronomy
  • For marinades, salt crusts, grilled and braised dishes where the coarse granules are intended to dissolve slowly
  • As a base for individual spice and herb salt blends in manufactories and food businesses
