Ancho chilli flakes, mild, 1–3 mm, dark red, Mexico

Product information "Ancho chilli flakes, mild, 1–3 mm, dark red, Mexico"

Product description

Ancho chilli is the dried form of Mexican poblano chilli and is one of the classic mild chillies in Mexican cooking. In this version it comes as a dark red, coarsely crushed product with a particle size of around 1–3 mm and a heat level of roughly 1,000–5,000 Scoville.

Its fruity, gently sweet aroma with notes of raisins, liquorice, tobacco and coffee makes this mild chilli a versatile seasoning for professional kitchens and ambitious home cooks. Biova relies on carefully selected raw material and gentle processing so that colour, aroma and flavour remain as true to nature as possible.

Thanks to its moderate heat, ancho chilli can be used generously and combines well with hotter chillies to create a balanced heat profile. It is ideal for sauces, marinades, stews and your own spice blends with an authentic Mexican character.

Origin

The poblanos used come from Mexico, where warm, sunny weather and long growing seasons produce intense flavours. The typical dark red to almost black pods develop their characteristic, multi-layered flavour profile there. Biova sources the raw material from established growing regions with a long chilli tradition.

Cultivation / production / harvest

The chillies are harvested fully ripe once they have developed their deep red colour. They are then gently dried before the pods are cleaned and crushed into a coarse granulate of around 1–3 mm. The result is an easy-to-dose bulk product that can be used with precision in the kitchen.

Key features

Compared to many other chilli varieties, ancho chilli is very mild, so the aroma clearly takes centre stage. The coarse, granular structure and intense dark red colour add visual depth and texture to sauces, rubs and marinades. As a Biova bulk option sold by the kilo, it is particularly interesting for operations with higher usage.

Differences in origin and processing

Mexican ancho chillies are characterised by their complex flavour profile, which is closely linked to local growing conditions and traditional drying methods. Faster drying processes or other growing regions can result in lighter colours and less pronounced aromas. The gentle processing preferred by Biova helps preserve colour, aroma and flavour.

Taste & aroma

This mild chilli offers a warm, restrained heat with fruity and slightly sweet notes. Typical associations are raisins, dark tobacco, liquorice and a hint of coffee, accompanied by an intense but not pungent aroma. It gives dishes a rounded, harmonious seasoning with a subtle smoky note.

Suggested uses

  • As a base seasoning for dark sauces, chilli con carne, stews and braised dishes.
  • In marinades and rubs for meat, poultry or vegetables, ideally combined with hotter chillies.
  • For creative uses such as chocolate–chilli desserts, fruity salsas or your own spice blends.
