Product information "Banasura pepper | whole | cold smoked"
What it is / Product description
This Banasura pepper from Biova comes from the high altitudes of the Indian Malabar Coast and is offered as whole black peppercorns. Gently cold-smoked over beechwood for several days, this ancient pepper combines its fruity, pungent note with a distinctive smoky bouquet. The result is a characterful gourmet spice that gives dishes a finely balanced, aromatic depth.
Thanks to cold smoking, the natural structure of the whole corns is preserved and the essential oils are protected. This ensures an intense yet well-balanced aroma that fully unfolds, especially when freshly ground. Biova relies on carefully selected bulk goods and gentle processing, making this smoked pepper ideal for demanding home kitchens and gastronomy.
In use, cold-smoked Banasura pepper opens up numerous possibilities – from hearty meat and fish dishes to vegetarian and vegan creations. Freshly crushed in a mortar or ground in a mill, it refines sauces, stews, cheese platters or grilled dishes with a subtle smoky note. This allows the characteristic pepper aroma to be used in many ways without the need for additional smoked ingredients.
Origin
The peppercorns come from the traditional growing region on the Malabar Coast in India, where the tropical climate and fertile soils promote slow growth and a high concentration of aroma. In Germany they are refined by an experienced smoking master using beech smoke. The combination of origin quality and German processing makes them a premium spice for Biova’s fine cuisine range.
Cultivation / Production / Harvest
The pepper is cultivated in smallholder structures, the ripe berries are harvested by hand and gently dried until they take on their typical black colour. For Biova, only whole, carefully selected corns are used, which are cold-smoked over beechwood smoke for several days. The low temperature of cold smoking prevents the corns from heating up and largely preserves the essential oils.
Special features
Characteristic is the combination of a fruity, pungent pepper note and a clearly defined beech smoke aroma. In contrast to hot-smoked varieties, the corns remain firm and easy to grind, allowing precise dosing directly from the mill. As black bulk goods, this smoked pepper is suitable for both end consumers and gastronomy, barbecue events and artisan producers.
Differences in origin and processing
Pepper from the Malabar region is known for its warm, lingering heat and complex aroma profile. Through additional cold smoking in Germany, it acquires an independent character that clearly sets it apart from unsmoked or only briefly refined varieties. This creates a special alternative to conventional black pepper that enhances both classic cuisine and modern grill recipes.
Taste & aroma
On the palate, there is a fruity, pungent base note accompanied by an intense, slightly woody smoky nuance from the beech smoke. On the nose, pronounced smoky aromas dominate, which blend harmoniously with the peppery heat when tasting. Freshly ground, the spice appears lively without being overpowering and gives dishes a pleasantly spicy depth.
Possible uses
- Use as a finishing pepper, freshly ground over steaks, roasts or grilled vegetables.
- Create a smoky aroma in sauces, stews or chili dishes without adding extra smoke ingredients.
- Round off cheese platters, baked potatoes or vegan burgers with a smoky, piquant note.
