This rare Banasura pepper from the Indian Wayanad district is characterized by whole, exceptionally large black peppercorns. The pepper plants are the result of a targeted cross between the Karimunda and Panniyur varieties and are harvested only when fully ripe. In the kitchen, Banasura pepper is particularly convincing when freshly crushed in a mortar or coarsely ground over dishes. Origin
The pepper comes from India, from the region around the Banasura Sagar Dam in the Wayanad district in the north of Kerala. Tropical climate, abundant rainfall and fertile soils provide ideal conditions for growing high-quality black pepper varieties. The limited cultivation area and careful management make this origin a special rarity in the Biova range.
Cultivation / Production / Harvest
The plants grow as climbing plants on tall support trees and reach heights of up to 12 meters. Harvesting takes place from mid to late March, when the berries are fully ripe and have developed their full aroma. The whole pepper berries are then dried in the sun, sorted by hand and packed as black bulk goods in units of around 1.05 kg.
Special features
Characteristic are the unusually large, whole peppercorns with intense seasoning power and deep black color. Compared to standard pepper, the harvest quantity is severely limited, which makes this variety a sought-after specialty. The combination of special breeding, late harvest time and traditional processing results in an expressive pepper profile that Biova specifically selects for gourmets and professionals.
Differences in origin and processing
In contrast to pepper from other regions of India or Vietnam, this variety is harvested later and comes from the Karimunda x Panniyur cross. The altitude and microclimate around the Banasura Sagar Dam promote slower ripening and thus a more complex aroma. Manual sorting and gentle sun-drying additionally contribute to the quality, uniformity and distinctive grain size of the whole peppercorns.
