Origin
The pods used come from Ecuador, where warm temperatures and plenty of sunshine provide ideal conditions for Capsicum chinense. In suitable locations, the fruits ripen slowly and develop their intense red color. Biova works with selected partners to ensure consistent quality of the extremely hot red chilies.
Cultivation / Production / Harvest
The plants are grown outdoors or in protected cultivation and are checked regularly during the ripening phase. Only fully ripe, deep red pods are harvested and then gently dried. After drying, the chili is coarsely crushed to 1–3 mm before being sieved, inspected and packed into bags.
Special features
It is characterized by an extremely high heat level of over 500,000 Scoville units, combined with a strikingly fruity aroma. The coarse grain size allows good distribution in the dish without the pieces dominating. Compared to milder red chilies, a very small amount is sufficient to noticeably increase the heat of dishes.
Differences in origin and processing
Bhut Jolokia is originally known from India, but cultivation in Ecuador offers stable climatic conditions and reliable yields. Differences arise mainly from drying and crushing: gentle methods preserve color, heat and aroma better than rapid high-temperature drying. Taste & aroma
