Bhutan pepper from Biova comes from the high-altitude regions of the Himalayas and botanically belongs to Sichuan pepper. Bhutan pepper is not cultivated on plantations but harvested as a wild-growing Sichuan type. Local farmers carefully pick the ripe seed capsules by hand, gently dry them and then sort them manually. This preserves the colour, structure and essential oils of the whole capsules as well as possible.

Special features

It is a wild subspecies of Sichuan pepper with smaller capsules and an exceptionally intense citrus aroma. Characteristic is the slight tingling and numbness in the mouth, combined with mild heat and fine bitterness. These properties make the lemon pepper ideal for delicate spice blends and modern seasoning compositions.

Differences in origin and processing

In contrast to Sichuan pepper from other Asian regions, this lemon pepper grows in the high-alpine zones of Bhutan under strong temperature fluctuations.
