Product description

This Tellicherry pepper from Biova is grown in Kerala in southern India on the Malabar Coast and is one of the most aromatic varieties of black pepper. The almost fully ripe berries are coarsely cracked, giving a rustic, granulated texture with colours ranging from black to reddish brown.

Because it is harvested late as a late-harvest pepper, it develops a warm, multi-layered aroma with rounded heat and nutty, woody notes. Biova relies on gentle sun-drying and careful cleaning to preserve the essential oils and the typical Tellicherry quality as much as possible.

In the kitchen, cracked Tellicherry pepper is ideal for steaks, roasts, vegetable sautés, sauces and marinades. Use the coarse grind preferably towards the end of cooking or at the table to make full use of the flavour and appearance of this Indian pepper.

Origin

The pepper comes from the Periyar Nature Reserve in the state of Kerala on India’s Malabar Coast. Tropical climate, nutrient-rich soils and shade trees create optimal conditions for pepper vines, from which Biova sources selected lots for this bulk product.

Cultivation / production / harvest

The plants grow on supports in the shade of taller trees and are harvested when almost fully ripe, once the berries have turned reddish brown. After harvesting, they are dried in the sun, cleaned, carefully graded and then coarsely granulated to achieve an even cracked grain size.

Special features

As Tellicherry late-harvest pepper, only a small part of the crop reaches the TGSEB quality grade. The combination of almost fully ripe harvesting, gentle drying and coarse granulation gives this pepper its warm, slightly nutty aroma and makes it attractive for foodservice and high-volume users.

Differences in origin and processing

Compared to standard pepper harvested earlier, this Indian speciality is more intense, less sharp-edged and noticeably more complex in flavour. The cracked, granulated form ensures faster release of aroma and a visible, striking texture that enhances dishes both visually and in terms of mouthfeel.

Taste & aroma

On the palate, it shows a robust, warm pepper flavour with balanced, lingering heat. Nutty, woody nuances and a subtle sandalwood- or tea-like spice shape the profile, while the aroma is intense, spicy and long-lasting.
