Cultivation / Production / Harvest

The berries are still harvested by hand while green and unripe, when their aroma is particularly fresh and vegetal. Immediately after picking, they are gently dehydrated to prevent fermentation and blackening. The dried berries are then coarsely cracked, creating a granulated, easy-to-mix grain size.
