Product description
This muscovado sugar is an unrefined whole cane sugar from the island of Mauritius with a dark brown colour and a fine, almost powdery grain. Thanks to its high molasses content it stays pleasantly moist, slightly clumpy and clearly different from standard white table sugar.
The dark cane sugar contains around 10–15% molasses and develops a full-bodied caramel and malt-like flavour. In Biova bulk quality it offers consistent characteristics, good flowability and a fine, flaky texture that allows for precise dosing.
In the kitchen this whole cane sugar enhances both sweet and savoury dishes and adds aromatic depth. Especially in hot drinks, desserts, sauces and marinades, Biova muscovado sugar can be incorporated evenly thanks to its fine grain.
Origin
This whole cane sugar comes from the island of Mauritius in the Indian Ocean, where the tropical climate and fertile soils provide ideal conditions for growing sugar cane. The region is known for consistently high quality and the pronounced aroma of brown cane sugar.
Cultivation / production / harvest
The sugar cane is harvested on Mauritius once it has reached its optimal sugar content and is processed without delay. The freshly pressed juice is concentrated, cooked and stirred until crystals and molasses form, which are then only minimally further processed for Biova muscovado sugar.
Characteristics
A defining feature is the high molasses content of about 10–15%, which gives the sugar its dark colour, moist texture and intense flavour. The fine grain size of 0–0.3 mm makes it readily soluble and ideal wherever the sugar needs to disperse quickly and evenly.
Differences in origin and processing
Compared with muscovado sugar from other regions, the Mauritius variety stands out for its well-balanced ratio of sweetness to malty, caramel notes. Biova relies on gentle processing to preserve the molasses content, moisture and the typical fine, flaky structure as well as possible.
