Product description

Biova Pondicherry pepper comes from South India and consists of fully ripe black peppercorns fermented in unrefined sea salt. The whole corns remain in chunky pieces, have a slight sheen and a pleasantly soft texture.

Fermentation in sea salt noticeably softens the heat of the black pepper while preserving and concentrating its intense aroma. Biova relies on carefully selected raw material, gentle processing and consistent quality, supplied in practical bulk packs for professional users.

Origin

The peppercorns come mainly from the South Indian state of Tamil Nadu around Puducherry, an area with a tropical climate, abundant rainfall and fertile soils. These conditions promote an intense pepper aroma, while processing, packing and quality control are carried out by Biova in Germany.

Cultivation / production / harvest

The pepper plants grow in mixed crops on supports and are harvested by hand at full ripeness. Immediately after harvesting, the fresh black fruits are turned several times in moist, unrefined sea salt and then dried in the sun until fermentation and the desired residual moisture of the whole corns are achieved.

Special features

Unlike classic black pepper, the whole corns are deliberately fermented, which breaks down part of the piperine. The protective salt coating preserves the aroma and rounds it off, making this black pepper in bulk form particularly interesting for foodservice and artisan producers.

Differences in origin and processing

While conventional black pepper is usually only sun-dried and cleaned, Pondicherry pepper develops its characteristic profile through additional fermentation in sea salt.
