Product description

This fine bamboo salt from Biova is a white sea salt from South Korea, fired in bamboo tubes and ground to an almost icing-sugar-like powder. It is made from high-quality sea salt and gently refined following traditional Korean methods.

Firing the salt in bamboo tubes at high temperatures increases its mineral content and gives it a distinctly alkaline character with a pH value of around 9.9. The extremely fine grain size below 0.1 mm ensures very even distribution and precise dosing, even in professional kitchens.

Origin

The sea salt comes from South Korea, where the tradition of salt fired in bamboo tubes originated. The maritime climate provides pure sea salt, which is then further refined using time-honoured techniques.

Cultivation / Production / Harvest

The starting material is pure sea salt, which is dried after harvesting and filled into prepared bamboo tubes. These are fired once at around 1000–1500 °C, after which the salt is milled to its characteristic ultra-fine powder with a grain size below 0.1 mm.

This Biova sea salt is characterised by its extremely fine, almost powdery grain, which allows for very even distribution. It is a white sea salt, rich in minerals and with an alkaline pH value of approximately 9.9.

Differences in origin and processing

Unlike conventional sea salt, bamboo salt is additionally heat-treated and fired in bamboo tubes. For this variety, Biova uses a single firing process to achieve a balanced profile of minerality, alkalinity and intense salt flavour.

Taste & aroma

On the palate, the salt is very salty with a clear, intense salt flavour and no coarse crystals. The aroma is neutral to slightly mineral and blends subtly into a wide range of hot and cold dishes.
