Product description
Guérande sea salt comes from the traditional salt marshes on the French Atlantic coast and is harvested carefully by hand. The fine grain size of 0.1–1.0 mm and its natural grey-white colour make this Atlantic sea salt a versatile kitchen salt for everyday cooking and professional use.
Because it is produced gently without refining, the sea salt remains non-iodised, unprocessed and largely retains its original crystal structure. In Biova quality it is supplied as a fine, slightly flaky bulk product that is easy to dose and further process.
In the kitchen, this fine sea salt is ideal for cooking, seasoning and finishing a wide variety of dishes. Thanks to its balanced saltiness, it is also well suited for spice blends, bread and roll doughs as well as for use in foodservice and artisan production.
Origin
The sea salt comes from the Guérande region in Brittany in western France. Atlantic winds, clean seawater and plenty of sunshine create ideal conditions for traditional salt production in shallow salt pans.
Cultivation / Production / Harvest
Seawater is channelled into ponds and slowly concentrated by sun and wind until salt crystals form on the clay-rich base. Experienced salt workers harvest the salt by hand using wooden tools. It is then simply dried and sieved to the fine grain size of 0.1–1.0 mm – entirely without chemical additives.
Characteristics
A typical feature is the slightly grey-white colour, which results from contact with the mineral-rich clay. Unlike refined table salt, Biova sea salt remains unrefined, non-iodised and natural, and is offered as a fine, flaky sea salt in convenient bulk packaging.
Differences in origin and processing
In contrast to industrially evaporated vacuum salt, Guérande sea salt is obtained exclusively through natural evaporation. Traditional hand harvesting, the clay-rich subsoil and gentle drying give Biova Atlantic sea salt its characteristic grey-white colour and harmonious flavour profile.
