Product description
Biova Italian smoked salt is made from natural Mediterranean sea salt and traditionally cold-smoked over beechwood in southern Italy. The fine grain size of 1–2 mm and its brown colour make this smoked salt extremely versatile.
Several days of gentle cold smoking create an intense yet well-balanced smoky aroma without any artificial additives. Its free-flowing texture and uniform grain make it ideal for professional kitchens, catering and spice manufacturers.
Use this Biova smoked salt to season grilled dishes, stir-fries, roasted vegetables or tofu and give them a hearty chargrilled flavour. The fine grain allows precise dosing and works just as well in classic BBQ recipes as in vegetarian and vegan cooking.
Origin
The sea salt comes from Mediterranean salt pans on the shores of the Mediterranean Sea, where seawater slowly crystallises under sun and wind. It is then processed in a specialised smokehouse in southern Italy using traditional smoking methods.
Cultivation / production / harvest
The salt is obtained by natural evaporation in shallow basins, then gently dried and sieved after harvesting. It is adjusted to a fine grain size of around 1–2 mm and cold-smoked for several days over beechwood chips.
Characteristics

Differences in origin and processing
