Origin
This sea salt comes from Italy, from the saltworks of Trapani in the northwest of Sicily. Sun, sea breezes and clean seawater create ideal conditions for Biova’s premium Fiore di Sale.
Cultivation / production / harvest
In shallow evaporation ponds, seawater is concentrated by sun and wind until fine crystals form on the surface. This “salt flower” is carefully skimmed off by hand for Biova, gently dried and filled as a granular, coarse flake salt in convenient bulk packs.
Special features
Typical are the bright white colour and the flaky yet granular structure with a grain size of 0.5–2.0 mm. Compared to conventional table salt, these flakes taste milder, melt pleasantly on the tongue and enhance flavours without overpowering them.
