Fleur de sel | flakes | 0.5-2.0 mm

Product information "Fleur de sel | flakes | 0.5-2.0 mm"

What it is / Product description

Biova Fleur de Sel is a fine sea salt from South Africa with delicate white flakes of around 0.5–2.0 mm. It forms as an ultra-thin crystal layer on the surface of traditional salt pans and is gently harvested by hand. The crunchy texture and mild saltiness make these salt flakes a premium ingredient for sophisticated cuisine.

Thanks to natural air-drying, the original mineral composition is largely preserved. The flaky grain size ensures even salt release and a pleasant mouthfeel, ideal as a table salt and for finishing dishes. As bulk goods, this sea salt meets the requirements of spice manufacturers, gastronomy and food producers who rely on consistent Biova quality.

In use, Fleur de Sel proves particularly versatile: the flakes can be easily rubbed between the fingers and precisely dosed. This allows you to refine meat, fish, vegetables, salads or even delicate desserts directly before serving. The flake salt supports the natural flavour of the ingredients without overpowering them, making it ideal for creative culinary concepts with sea salt flakes.

Origin

The sea salt comes from a South African saltworks fed by clean seawater. Sun and wind ensure slow, natural crystal formation on the surface of the evaporation ponds. These conditions contribute to the high purity and uniformly white colour of the Fleur de Sel.

Cultivation / Production / Harvest

For this flake salt, seawater is channelled into shallow ponds and concentrated there by sun and airflow. As soon as the first fine crystals form, they are traditionally skimmed off by hand. After a short period of air-drying, the salt is filled as granulated / coarse flake salt bulk goods without any additives.

Special features

Unlike classic, crystalline sea salt, this product has a flaky, slightly brittle structure. The grain size of 0.5–2.0 mm combines fine dosing capability with a noticeable crunch on the tongue. The untreated quality and careful selection meet Biova’s high standards for pure salt types in bulk / retail variants.

Differences in origin and processing

Sea salts vary in mineral content, colour and crystal form depending on their origin. The South African Fleur de Sel is characterised by uniformly white flakes and gentle air-drying. Manual harvesting clearly distinguishes it from industrially evaporated salts and shapes the fine texture of these flake salts.

Taste & aroma

In sensory terms, the flake salt offers a mildly salty, harmonious taste without intrusive bitter notes. The flakes dissolve slowly in the mouth and highlight the natural aroma of dishes. The salt is virtually odourless and blends discreetly into hot and cold preparations.

Possible applications

  • As a table salt for final seasoning of meat, fish and vegetable dishes directly on the plate
  • For refining salads, soups, bowls and cold starters shortly before serving
  • In spice blends, rubs and salt blends for manufacturers, gastronomy and fine food production
