Product information "German organic smoked salt | granules | 1-3 mm | cold-smoked"
What it is / Product description
Organic German Smoked Salt combines unrefined sea salt from Croatia with traditional cold smoking in Germany. In the smoke of beech wood, a coarse, amber-brown granulate with a clear, smoky note is created. This allows you to refine dishes authentically, even without a grill.
Thanks to several days of cold smoking at low temperatures, the salt develops a dry, even smoke aroma without additives. The granulated grain size of 1–3 mm is ideal for bulk goods in professional kitchens, spice blends and for discerning home use. Biova relies on gentle processing in small batches and consistent quality.
In creative cuisine, the smoked salt offers numerous uses, from grilled dishes and stews to vegetarian and vegan meals. Refine soups, sauces, marinades or snacks with a pinch of the aromatic granules and add targeted smoky accents to everyday cooking.
Origin
The sea salt comes from salt gardens on the sunny coasts of Croatia, where wind and climate ensure even crystal formation. It is then cold-smoked over beech wood in German smokehouses, including in Saxony. The combination of Mediterranean origin and German craftsmanship shapes the characteristic Biova smoked salt.
Cultivation / Production / Harvest
The salt is obtained by natural evaporation of seawater in ponds, then dried, cleaned and granulated. In Germany, the granules are stored for several days in a cold-smoking process over selected beech wood chips. In this way, they gently absorb smoke, colour and aroma while remaining free-flowing and easy to dose.
Special features
Typical are the amber-brown colour and the coarse grain size of 1–3 mm, which allow precise dosing. The product consists exclusively of sea salt and beech wood smoke, with no further additives or flavourings. Artisan production in small batches and Biova’s quality control distinguish it from industrially flavoured smoked salts.
Differences in origin and processing
In contrast to refined table salt, this sea salt remains largely unprocessed and retains its original structure. Cold smoking creates a fine, dry smoke aroma that clearly differs from hot-smoked or merely flavoured salts. This makes origin and processing clearly perceptible to the senses.
Taste & aroma
On the nose, the salt is reminiscent of classic beechwood smokehouses without being overpowering. In terms of taste, the mild saltiness of the sea salt combines with a clear, hearty smoky note that gives dishes depth. During cooking, the coarse granules dissolve well and support a rounded, balanced flavour profile.
