Guajillo chilli flakes 1–3 mm, dark red, 1,000–8,000 SHU

Product information "Guajillo chilli flakes 1–3 mm, dark red, 1,000–8,000 SHU"

Product description

Guajillo is one of the signature chillies of Mexican cuisine and is made from fully ripe Mirasol pods. The dark red fruits are gently dried and then processed into a coarse 1–3 mm flake.

Careful processing for Biova creates an aromatic, berry-like profile with notes of dried fruit, pine resin and fine herbs. The coarse, granulated cut distributes the mild to moderate heat of around 1,000–8,000 Scoville units evenly and makes dosing easy, including in large-scale and bulk processing.

In the kitchen, Guajillo chilli is ideal for authentic Mexican dishes, flavourful sauces and salsas. Biova’s coarse flake also adds depth, colour and gentle heat to marinades, rubs, stews and rice dishes.

Origin

The chillies come from Mexico, where Capsicum annuum varieties ripen in a warm, dry climate with intense sunlight. These conditions promote an even red colour, a well-balanced flavour profile and consistent quality for spice bulk.

Cultivation / processing / harvest

The Mirasol chillies are grown in open fields and harvested by hand at full maturity. They are then dried in the sun or with warm air before being destemmed, inspected and milled for Biova into a coarse, granulated 1–3 mm flake.

Key features

Typical for this product is the combination of mild to medium heat with a complex, fruity-warm aroma. The dark red colour and defined “granulated / crushed / coarse” cut make this Biova chilli spice ideal for consistent recipes and larger production runs.

Variations in origin and processing

Depending on the Mexican growing region, nuances in fruitiness, spice and grassy notes can vary. Gentle drying that preserves essential oils and colour is crucial for quality; Biova ensures an even particle size and sensory checks to guarantee a stable Guajillo profile.

Taste & aroma

Sensory-wise, this spice offers a warm, berry-like aroma with notes of dried fruit, pine resin and a hint of green tea. With a heat level of around 1,000–8,000 Scoville units, it tastes pleasantly mild to moderate and supports other ingredients without overpowering them.

Suggested uses

  • As a base for Mexican sauces, salsas, enchilada and taco sauces
  • In marinades and rubs for meat, poultry, grilled dishes and BBQ blends
  • To season stews, chilli con carne, vegetable dishes and rice dishes
