Guérande sea salt comes from traditional salt marshes on the French Atlantic coast and is offered here in a coarse, re-dried grade. The naturally grey crystals under 6 mm give this unrefined table salt its authentic, regionally typical character.

Origin

This sea salt comes from the Guérande region in France, where mild temperatures, sunshine and Atlantic winds support the natural evaporation of Atlantic seawater. The long salt-making tradition of the marshes ensures consistently high quality, which Biova specifically selects for this product.

Cultivation / production / harvest

Atlantic seawater is channelled into shallow ponds and concentrated solely by sun and wind. The paludiers (salt workers) push the forming coarse crystals together by hand using wooden tools, before the salt is re-dried and packed for Biova into 1 kg bags without any additives.

Special features

Its slightly grey colour is characteristic and results from contact with the clay-rich pond floor. The coarse grain size under 6 mm ensures slow solubility and a noticeable texture when finishing dishes, while the sea salt remains unrefined and retains part of its original mineral content.

Origin and processing compared

Unlike industrially evaporated vacuum or rock salt, this sea salt is created purely through natural evaporation. The artisanal harvest in Guérande produces irregular, coarse crystals with a typical structure and a distinct regional flavour that sets it apart from many other sea salts.
