By cooking natural crystal salt with the plant Salsola stocksii, a natural rock salt with a high sulphur content and mineral character is created. The fine, slightly flaky texture distributes evenly, dissolves well and is ideal in 1 kg packs for foodservice and demanding home cooks.

Cultivation / production / harvest
For production, natural crystal salt is traditionally cooked with parts of the Salsola stocksii plant. During this process, sulphur compounds and minerals bond with the salt before it is cooled, dried, milled and carefully sieved to the fine grain size of 0.3–0.5 mm.
Characteristics
Typical of this Biova black salt is its intense, sulphurous aroma reminiscent of boiled eggs, which gives dishes a distinctive flavour.
