Kampot pepper from the southern province of Kampot in Cambodia is one of the most characterful pepper varieties worldwide. The whole black peppercorns show a dense structure and a multi-layered aroma with fresh, essential notes that is particularly appreciated within Biova’s range of spices.
The pepper is grown without artificial fertilisers and without synthetic crop protection agents, tended predominantly by hand and carefully hand-picked. This way, only particularly beautiful and large berries make it into Biova’s bulk goods, ideal for professional kitchens and discerning retailers.
In the kitchen, freshly ground or crushed black Kampot pepper unfolds an intense yet harmonious aroma that complements dark meat, robust sauces and hearty vegetable dishes. Thanks to the whole peppercorns, the heat can be precisely dosed and used in many different ways.
Origin
The pepper comes from the Kampot region in the south of Cambodia, near the coast of the Gulf of Thailand. The tropical climate with high humidity, regular rainfall and nutrient-rich clay soils creates ideal conditions for this protected pepper speciality with PGI certification.
Cultivation / Production / Harvest
The plants grow on traditional pepper poles and are tended predominantly by hand. Green, still unripe berries are harvested and dried in the sun, where they ferment naturally and develop into black, aroma-dense peppercorns before being sorted as whole corns for Biova.
Special features
In contrast to many standard peppers, this pepper is cultivated without mineral fertilisers and without synthetic pesticides. Hand harvesting, sun-drying and careful hand selection result in homogeneous bulk goods with a high aroma density, specially designed for processors, delicatessens and the food service industry.

The combination of coastal proximity, clay soils and traditional, low-mechanised processing clearly distinguishes Kampot pepper from pepper from other growing regions. Taste & aroma
Black Kampot pepper shows a strong, pleasant heat with notes of mint and eucalyptus. On the nose it presents itself as warm and spicy with fresh, slightly essential nuances and appears on the palate round, long-lasting and well balanced.
