Product description
Discover long pepper from Central Java in whole catkins, around 2–4 cm long, with an intensely warm, spicy aroma. This traditional Indonesian pepper spice, also known as Piper longum, adds a distinctive, characterful alternative to classic black pepper to the Biova range.
The elongated pepper catkins deliver a long-lasting, well-rounded heat with sweet and earthy notes. Carefully dried and supplied in bulk by Biova, they retain their aroma for a long time and are ideal for use in pepper mills or for freshly crushing in a mortar.
In sauces, stocks, curries or marinades, long pepper can be cooked whole or coarsely crushed, giving dishes depth and a lightly floral sweetness. This makes the versatile spice easy to use both in professional kitchens and for ambitious home cooking.
Origin
This pepper comes from Indonesia, specifically from Central Java with its tropical climate and fertile volcanic soils. These conditions promote intense aromas and even ripening of the catkins, which Biova sources from selected growing areas.
Cultivation / production / harvest
The plants grow as climbing vines whose catkins are harvested by hand at different stages of ripeness. The catkins are then gently dried, cleaned and prepared as whole pieces for bulk packing.
Features
Visually, this spice differs clearly from round peppercorns through its catkin-like, 2–4 cm long pieces. As brown to black bulk goods, long pepper stores well and can be freshly ground or cooked whole as needed.
