Product information "Organic allspice berries, Jamaica type, whole"
Product description
Organic allspice, also known as Jamaica pepper or pimento, consists of whole brown berries with a warm, complex aroma. They combine notes of clove, cinnamon, nutmeg and pepper and are suitable for both savoury and sweet dishes.
Thanks to their high content of essential oils and certified organic cultivation, these berries deliver a consistent, easy-to-control flavour intensity. Biova relies on carefully cleaned, single-origin raw material in practical bulk / catering formats for foodservice, artisan producers and high-volume users.
In the kitchen, organic allspice enhances braises, game dishes, sausages and pickled vegetables as well as baked goods and desserts. Whole berries keep well in storage, can be freshly crushed as needed or added whole to dishes, lending targeted flavour to stocks, soups, sauces and marinades.
Origin
The allspice berries used by Biova come predominantly from Guatemala, supplemented by lots from Mexico. The tropical climate with abundant rainfall and nutrient-rich soils supports the typical Jamaica-style aroma and a consistently high quality of the brown berries.
Cultivation / production / harvest
The allspice tree (Pimenta dioica) is grown organically without synthetic pesticides. The berries are harvested while still green and unripe, then gently dried until they turn brown, cleaned and prepared for Biova as whole berries with the grading “chunks / whole”.
Key features
Allspice combines the flavour of several spices in a single ingredient, making it exceptionally versatile. The chunks / whole grading, brown colour and efficient bulk packaging make this spice ideal for professional kitchens, artisan producers and for creating your own spice blends.
Differences in origin and processing
Allspice from Guatemala tends to be milder and well-balanced, while Mexican lots are generally more robust and pungent. Careful drying and cleaning for Biova ensures a clear flavour profile and uniform quality in both cases.
Taste & aroma
Organic allspice has a warm, spicy and slightly sweet fragrance with pronounced notes of clove, cinnamon and nutmeg. On the palate it shows a medium, pepper-like heat that rounds off braises, game dishes, marinades and sweet pastries harmoniously.
Suggested uses
- To cook along in braised dishes, game stews, soups, stocks and one-pot meals
