Organic cocoa from fine Peruvian Criollo beans is a finely ground brown cocoa powder with a delicately tart, aromatic note. The strongly defatted raw cocoa powder (10–12% fat) dissolves well in liquids and is suitable for professional applications as well as for demanding households.

Origin
The Criollo cocoa beans come from Peru, a traditional cocoa-growing region with a tropical climate and fertile soils. Altitude, consistent rainfall and warm temperatures promote slow ripening and form the basis for the aromatic quality of this Biova raw cocoa.
Cultivation / Production / Harvest
The cocoa is cultivated under certified organic conditions, predominantly in smallholder structures. After harvesting, the beans are fermented, gently dried, milled into raw cocoa and then strongly defatted, resulting in a fine to flaky cocoa powder with around 10–12% fat for bulk goods.

Taste & aroma
