Organic Cacao | Trinitario | beans | raw 50-52%

Product information "Organic Cacao | Trinitario | beans | raw 50-52%"

What is it about / Product description

Organic cocoa of the Trinitario variety from Ecuador offers whole, raw cocoa beans with a natural cocoa butter content of around 50–52%. The beans appear as unpeeled chunks in a strong cocoa brown and are ideal for your own further processing. At Biova you receive a natural premium ingredient for artisanal chocolate and dessert creations.

Thanks to controlled organic cultivation and gentle fermentation, the characteristic aroma profile and valuable nutrients are largely preserved. Biova’s bulk quality is designed for consistent raw cocoa quality and is therefore particularly interesting for manufactories, gastronomy and ambitious hobby chocolatiers. The combination of the fine-flavour Trinitario variety and raw bean form allows maximum freedom in roasting and recipe development.

Whether for bean-to-bar chocolate, creative desserts or as a base for cocoa nibs and powder – organic cocoa in whole beans can be used in many ways. You determine the roasting level, grind size and intensity yourself and adjust the cocoa precisely to your desired taste. This results in individual products that reflect the original character of the raw cocoa from Ecuador.

Origin

The Trinitario cocoa beans come from Ecuador, a traditional cocoa-growing region with a tropical climate, high humidity and nutrient-rich soils. These conditions promote balanced growth of the cocoa trees and a complex aroma profile. Biova works with selected partners who ensure reliable organic quality and transparent origin.

Cultivation / Production / Harvest

The cocoa trees are cultivated according to certified organic guidelines, without synthetic pesticides or mineral fertilisers. After harvesting, the cocoa pods are opened, the beans are fermented and gently dried. The whole beans are then cleaned, selected and packed as bulk goods so that you receive around 1.05 kg including packaging per kg of product.

Special features

Trinitario is considered a fine-flavour cocoa that combines characteristics of Criollo and Forastero cocoa and thus offers a balanced, aromatic profile. The beans are delivered raw and unpeeled so that you can control roasting and processing individually. Thanks to the combination of organic quality, chunks / whole and bulk / single-unit variants, this product is particularly interesting for professional users.

Differences in origin and processing

Depending on the region within Ecuador, nuances in fruitiness, acidity and bitterness may occur. Fermentation time, drying and storage additionally influence the sensory properties of the raw cocoa. By supplying the cocoa as whole raw beans, you retain control over the later roasting profile and can tailor the flavour precisely to your recipes.

Taste & aroma

Typical of organic Trinitario cocoa is a multi-layered aroma with notes of dark chocolate, fine bitterness and subtle fruity nuances. Nutty and slightly floral notes often appear as well, underlining the fine-flavour character. When you open the package, an intense, cocoa-typical scent unfolds, reminiscent of high-quality chocolate specialities.
