Origin
The cinnamon sticks come from Sri Lanka, the classic growing region for true Ceylon cinnamon. The tropical climate with high humidity and even temperatures supports a particularly fine, well-balanced aroma profile.
Cultivation / production / harvest
The cinnamon trees grow mainly in mixed plantations and are pruned regularly to encourage young, aromatic shoots. The thin inner bark is removed by hand, layered, pushed into one another and slowly dried to form the typical multi-layered quills of around 8 cm in length.
Key features
As whole sticks, the essential oils remain protected for a long time and are only released when heated in a dish or drink. Origin and processing differences
