Origin

The Criollo cocoa beans come from Peru, a traditional cocoa-growing region with a tropical climate and nutrient-rich soils. Higher altitudes and consistent rainfall promote a balanced aroma and a fine acidity profile.

Cultivation / Production / Harvest

The cocoa trees are grown under certified organic conditions, without synthetic crop protection agents. After harvesting, the beans are carefully fermented, gently dried, roasted and then broken into coarse nibs.

The use of pure Criollo beans sets this product apart from many standard cocoas. The natural fat content of around 50–52% ensures a full-bodied mouthfeel and a pleasant melting texture during processing, ideal for fine patisserie and confectionery.

Differences in origin and processing

Peruvian Criollo cocoa often shows a particularly fine aroma with less pronounced acidity than cocoas from other regions. Roasting and breaking the beans into coarse nibs preserve structure and bite and clearly distinguish them from heavily defatted powders.
