Cultivation / Production / Harvest
The cocoa is grown under certified organic conditions, predominantly by smallholder farmers. After harvest, the beans are fermented, gently dried, milled into raw cocoa and then strongly defatted to produce a fine to slightly flaky cocoa powder with around 10–12% fat, supplied for bulk use.
