Biova organic cubeb pepper is a whole black stem pepper from Indonesia with small stalks on the berries. The dark brown to black corns develop a warm, spicy aroma with notes of mint, eucalyptus and allspice when crushed.
Thanks to its mild heat and slightly bitter-sweet nuances, this cubeb pepper tastes harmonious and at the same time aromatically complex. Biova relies on controlled organic cultivation, gentle sun-drying and careful selection, resulting in homogeneous bulk goods with little breakage and stable quality.
In creative cuisine, the whole stem pepper refines pepper blends, braised dishes, fish and seafood as well as chutneys, sauces and marinades. Use the broken or whole corns in a mill or mortar to release the full aroma directly during cooking.
Origin
The berries come predominantly from the Indonesian island of Java, where the warm, humid tropical climate and volcanic soils promote the camphor-like aroma. Depending on the batch, Biova supplements with goods from Sri Lanka of comparable quality and sensory profile.
Cultivation / Production / Harvest
The fruits are grown organically and harvested green shortly before full ripeness, when their typical aroma is at its most intense. They are then gently dried in the sun until they are dark brown to black and hard, so that the whole corns are preserved as broken or whole goods.
Special features
Characteristic of cubeb pepper are the short stalks and the menthol-like freshness reminiscent of mint, eucalyptus and allspice. Compared to classic black pepper, the heat is milder, while the aroma is more complex, more resinous and particularly interesting for high-quality spice blends.
Differences in origin and processing
Climate, altitude and soil in Indonesia or Sri Lanka influence the intensity and freshness of the aroma. Slow sun-drying and thorough cleaning ensure an even colour, homogeneous grain size and bulk goods that are well suited for further processing in the spice trade.
Taste & smell
On the nose, the pepper shows a warm, spicy, slightly resinous bouquet with hints of mint and eucalyptus. On the palate it develops subtle, lingering heat, bitter-sweet notes and a fresh, menthol-like component, making it an exciting alternative to conventional black pepper.
