Organic fermented Kampot pepper, whole, PGI

Product information "Organic fermented Kampot pepper, whole, PGI"

Product description

Organic Kampot pepper from Cambodia is a rare gourmet spice with Protected Geographical Indication and an intense, multi-layered aroma. The whole black peppercorns are fermented, giving them a juicy, soft, slightly chunky texture.

Thanks to gentle fermentation and careful batch selection, Biova offers a certified organic pepper speciality with pronounced aromatic depth and long-lasting heat. The 1.05 kg bulk pack is ideal for foodservice, fine food retailers and artisan producers.

In the kitchen, fermented Kampot pepper is perfect as a finishing touch for steaks, fish, vegetables or creative salads. The soft pepper chunks can be crumbled directly over the finished dish or coarsely crushed in a mortar to release their aroma freshly.

Origin

The pepper comes from the Kampot region in southern Cambodia, where the tropical climate and mineral-rich soils create ideal conditions for pepper cultivation. The PGI label guarantees origin and defined quality standards.

Cultivation / Production / Harvest

The vines are grown in mixed cultivation according to organic guidelines and harvested by hand once the berries have reached optimal ripeness. After cleaning, the fresh corns are fermented, gently dried and packed by Biova as whole, soft pepper chunks in 1.05 kg units.

Special features

Fermentation gives the corns their characteristic softness and juicy mouthfeel, clearly setting them apart from classic hard-dried pepper. The combination of organic quality, PGI origin and special processing results in a Biova spice with exceptional aromatic density.

Differences in origin and processing

Unlike standard pepper from large-scale cultivation, harvest volumes from Kampot are limited and growing conditions are strictly controlled. The additional fermentation intensifies the natural aromas, creates a heat that feels mild yet lingers, and allows use without a pepper mill by simply crushing the corns.

Taste & aroma

On the palate, fermented Kampot pepper shows a warm, robust heat with earthy and woody notes and a subtle fruitiness. On the nose, it reveals intense, spicy aromas with hints of dried herbs and delicate smoky notes, with a full-bodied, long-lasting finish.

Suggested uses

  • Crush as a finishing pepper for steaks, fish fillets and grilled vegetables directly before serving.
  • Add shortly before serving to refine creamy sauces, risotto or pasta.
  • Use as an aromatic highlight in burgers, carpaccio or burrata salads.
