Cultivation / Production / Harvest
The sea salt is created through natural evaporation in salt gardens, then harvested, washed, dried and sieved to the desired fine to flaky grain size. In a specialised German smokehouse it is cold-smoked over selected beechwood chips for several days. During this time, each grain of salt evenly absorbs smoke colour and aroma without clumping.
Special features
Characteristic are the brown to amber colouring, the fine grain size and the clear beechwood smoke aroma. In contrast to smoked salts with added liquid smoke, Biova relies on real smoke and a longer smoking time, which enables an intense yet well-balanced aroma. As bulk goods with approx. 1.05 kg per unit, the product is particularly suitable for larger processing quantities.
Differences in origin and processing
Many smoked salts are based on rock salt or are only briefly treated with flavourings. Here, Mediterranean sea salt is combined with traditional cold-smoking in Germany, resulting in a deeper and more natural smoke aroma.
