Product information "Organic green peppercorns, whole"
Product description
Organic green pepper from Sri Lanka, whole, delivers a fresh, slightly grassy aroma and pleasantly mild heat. The unripe pepper berries are gently dried so that their colour and typical pepper fragrance are preserved.
Thanks to certified organic cultivation and careful selection, Biova green pepper offers consistent quality. Whole peppercorns are ideal for grinding fresh in a mill or mortar and are easy to dose.
In the kitchen, organic green pepper refines light sauces, meat, fish and vegetable dishes as well as creative recipe ideas. With its moderate heat, it seasons dishes aromatically without overpowering other flavours.
Origin
The pepper vines grow in the central highlands of Sri Lanka in a tropical climate with high humidity and nutrient-rich soils. Small farms cultivate for Biova in partial shade, which supports slow, aroma-rich growth.
Cultivation / production / harvest
The organic pepper is grown without synthetic pesticides or artificial fertilisers. The still-green berries are harvested by hand and then gently dehydrated straight away to prevent fermentation and to retain the structure, colour and aroma of the whole corns.
Special features
Unlike pickled green pepper, this version is supplied as a dry product in bulk. The combination of organic quality, careful drying and hand selection makes Biova green pepper an aromatic alternative to black pepper.
Differences in origin and processing
Green pepper from Sri Lanka develops a particularly fresh, slightly fruity profile that differs from the more intense qualities of other growing regions. Direct dehydration after harvest prevents it from turning into black pepper and results in milder heat.
Taste & aroma
On the palate, organic green pepper offers a herbal, grassy aroma with subtle fruity notes. The heat is moderate and pleasant, while a clear peppery scent seasons dishes without dominating them.
Suggested uses
- Freshly ground for light sauces, cream and pepper sauces served with beef, veal, poultry or pork.
- As an aromatic seasoning for fish, seafood and delicate vegetable dishes in modern cuisine.
- To round off fruity desserts with strawberries, pineapple or mango with a gentle touch of heat.
