Organic ground mace (nutmeg aril), orange, bulk

Product information "Organic ground mace (nutmeg aril), orange, bulk"

Product description

Organic mace, also known as nutmeg flower, is obtained from the delicate aril surrounding the nutmeg kernel and is processed for Biova in Sri Lanka into a finely ground, orange-coloured powder. Its warm, spicy and slightly sweet aroma makes it ideal for professional bulk use in commercial kitchens, artisan production and the food industry.

Careful drying and gentle grinding preserve the characteristic aroma and flavour profile to a large extent, ensuring consistent Biova quality with a homogeneous particle size. The fine texture allows precise dosing and even distribution in sauces, doughs and spice blends.

In day-to-day use, ground mace refines potato dishes, cream soups, light sauces, vegetable sautés as well as meat and fish dishes. Organic mace also adds subtle notes to baked goods, desserts and hot drinks and can be easily incorporated into bespoke seasoning recipes.

Origin

The nutmeg trees for this organic mace grow in Sri Lanka in a tropical climate with high humidity and nutrient-rich soils. These conditions promote a complex flavour profile with balanced spice and gentle sweetness.

Cultivation / processing / harvest

The nutmeg fruits are harvested by hand as soon as they split open when fully ripe and the orange aril becomes visible. This aril is carefully removed, gently dried and then ground into a fine powder, tailored to the requirements of Biova bulk products.

Special features

Compared to nutmeg, mace is milder yet more complex in flavour and is therefore particularly valued for delicate sauces, desserts and baked goods. In its ground, orange-coloured form it is easy to stir in and ensures an even seasoning in both liquid and solid preparations.

Differences in origin and processing

Mace from Sri Lanka is known for its warm, slightly sweet note and harmonious spice profile. Careful drying and a defined grind determine the fineness of the powder and the intensity of the aroma, enabling Biova to offer a stable, easily standardised flavour profile.

Taste & aroma

Ground mace has a warm, spicy and gently sweet fragrance with fine resinous and slightly citrusy nuances. On the palate it shows a well-balanced interplay of spicy and mildly nutty notes, rounder and less sharp than classic nutmeg.

  • Seasoning mashed potatoes, vegetable bakes and creamy soups in large-scale kitchens and artisan production.
